Sky Dining is a unique fine dining experience, served in a 'pop-up restaurant' 100 metres above sea level, surrounded by breath-taking panoramic night-time views over Portsmouth Harbour and the Solent.

Local chefs from Wild Gastro will be bringing their exclusive menu to new heights with local produce and sensational flavours combined with spectacular night-time views. The five course menu will showcase the finest seasonal produce from handpicked local suppliers known for their exceptional quality.

Guests can choose between two dates, Saturday 27th July or Saturday 17th August, and will arrive at 7:30pm to be whisked up to View Deck One, where they will be served prosecco on arrival, canapes, and a five course taster menu.

The menu includes canapes such as: Soy & Ginger Glazed Romsey Pork Belly & Toasted Sesame Seeds, Lyburn Cheddar & Roasted Shallot Arancini and Laverstoke Park Farm Black Pudding Quails Scotch Egg & Burnt Apple Puree. This is followed by a starter of Line Caught Corner 53 Gin Cured Trout, a main course of Sous Vide Rump of Lamb from Ashfield Farm and a dessert of Set Lemon Mousse, New Forest Raspberry Homemade Sorbet, Texures of Raspberry, White Chocolate & Fresh Basil.

The vegetarian menu also has canapes that include: Chickpea & Alresford Watercress Quails Scotch Egg & Burnt Apple Puree, Sautéed New Forest Mushrooms on Sourdough Crostini and Smoked Potato Veloutte & Alresford Watercress. These are followed by a starter of Isle of Wight Heritage Tomatoes, Laverstoke Park Farm Mozzarella, Black Olive Crumb & Basil Sponge a main course of Charred New Forest Asparagus, Crispy Lycroft Farm Egg, Potato & Rosemary Terrine, Squash Veloutte & Toasted Hazlenut Butter and a Set Lemon Mousse dessert.
