ingredients (for 4 people)

  • 1 chicken
  • 100 g green olives
  • 1 preserved lemon
  • 1 big onion
  • parsley
  • 4 spices – cinnamon -black pepper – ginger
  • mixed coriander + parsley + garlic preserved in olive oil

 

preparation

Cut the chicken into pieces, wash it with salt and vinegar for few minutes and wash it again with clear water.

In a pan, put ½ glass of oil and add the chicken, ¼ tea spoon of black pepper, ¼ teaspoon of cinnamon, ½ teaspoon of ginger, ½ teaspoon of 4 spices and salt.

Mix and let it glaze for 5 minutes.

At this stage, you can grill the chicken for 10 minutes in the oven to make it crispy if you’d like.

At the end of the cooking, add the olives and the lemon cut in 8 pieces. Warm this up for 1 minute.
